Over Memorial Day weekend my friend and I arranged a small outdoor cocktail party with a few friends. One of my favorite recipes made that day was the coconut mojito. After my friend spent some time cracking open a fresh coconut, we drained the juice out of it, and threw in two shots of rum and some agave nectar and fresh mint leaves. Topped with seltzer, this is the perfect light summer cocktail!
Ingredients: Fresh mint Agave nectar Rum Coconut Limes
Crack open fresh coconut and pour juice into a cup. Mix two shots of rum, a shot of agave, and the coconut juice in a shaker with ice and chopped mint leaves. Add slices of lime and a splash of seltzer and pour!
